Sapin-sapin
Sapin-sapin originated in the Visayas and Mindanao regions of the Philippines, where it has since become a staple dish. Sweet and colorful, this dish is a specialty made with glutinous rice. A Filipino staple, this sweet is loved by young and old alike.
Layers of glutinous rice batter in varying colors are sweetened with coconut milk and rolled in shredded coconut to create sapin-sapin. The sweetened coconut curd called latik and shredded coconut are spread atop the steamed layers. Ube (purple yam) provides the purple color, annatto seeds provide the yellow, and coconut milk or coconut cream supplies the white.
The dessert is widely enjoyed in the Philippines and is frequently served at celebrations and events. It’s common fare on the streets and in the restaurants of the neighborhood.
