Tapsilog
The Filipino breakfast dish tapsilog, or “tapsi” for short, consists of the three staples of any Filipino breakfast: garlic fried rice, cured beef, and itlog (egg). Many Filipinos now eat this dish for breakfast every day; it is believed to have been created in the Philippines in the 1970s.
Thinly sliced beef is marinated in soy sauce, vinegar, and spices to make the tapa. The beef is marinated for a few hours or overnight to enhance its flavor. The result is a tapa with a distinct, savory flavor and a tender, meaty texture. The tapa is then cooked in a frying pan or on a grill until the exterior is crisp and the interior is juicy.
Simply sauté minced garlic in oil until fragrant, add cooked rice, and stir until the rice is well-coated with the garlic oil, and you have sinangag, also known as garlic fried rice. The Filipino dish sinangag is a common accompaniment to many different main courses.
Protein is upped a notch when an egg, or “log,” is fried or scrambled and tossed into the mix. The egg is typically served sunny-side up and cooked to perfection.
Local “tapsihan” restaurants, which specialize in serving tapsilog in a variety of forms, are a good place to try this popular dish. A lot of Filipinos turn to this dish when they need something scrumptious to eat for breakfast that won’t take forever to prepare.
